Vegan Chocolate Mousse--Made with Avocados!
Looking for an easy dessert that satisfies a sweet craving, is easy to make, is created with 100% whole foods, and looks impressive? Well I've got one for you! With a base of avocados, this chocolate mousse is dense, sweet, and tastes far more like a guilty pleasure than it really is!
Wow, did this week fly by. I actually made this mousse nearly a week ago and didn't have time to post it. It's been a busy few days! We concluded our first ever giveaway--thank you to OOFOS and congratulations to Molly! I also finally felt well enough to fully get back into serious training mode and clocked 21 miles last Saturday in spite of snow and chilly temperatures, so I am a bit more optimistic about my upcoming 50k. I'm also gearing up to take a coaching course this weekend, hosted by Road Runners Club of America. Oh, and I work full time. All good things--but so little time to play in my kitchen or with this blog.
So sadly this week has not been full of delicious recipes. We've been eating a lot of rice & veggies because I've only had time to throw things hastily into the pressure cooker. I will get around to posting more of my super quick meals--usually just rice & veggies with a homemade sauce--so if you're interested in hearing about these, please let me know!
While we were eating in a rush all week, the week before, I made this chocolate mousse. It honestly blew me away with how decadent it is. Taste Tester gets to eat a lot of experiments, and he dubbed this one 'amazing' after a few bites. The best part? It's made with nutrient rich avocados & completely natural ingredients. It's also very easy to customize based on what you have on hand. There is just a little bit of hands on prep, then it's mostly just waiting for it to chill a little bit in the fridge, so this could absolutely be made midweek. Medium Quick, Easy
Makes 4 servings
What you need:
Flesh of two Avocados
3/4 cup almond milk, or whatever milk you have on hand (Water will work!)
1/4 cup cocoa powder
1//4 cup + tablespoon sweetener--I used NOW Foods Date Sugar but you could use honey, agave, etc.
Juice of an orange (It works without this, but it adds to the flavor if you have one on hand!)
1/2 teaspoon salt
Directions:
1) In a blender, puree all of your ingredients until smooth. When done, transfer to a bowl. It will look something like this:

Yes, I know what this looks like. I promise it ends well. Originally this popped up as the thumbnail for this post and I had to quickly change it, as this is going to attract absolutely nobody.
2) Using either a whisk or an electronic hand mixer with the whisk setting, beat the mixture for a few minutes until it gets lighter and fluffier. It will almost double in volume, and will end up looking something like this:

Now we're getting somewhere!
3) Now, carefully spoon the mixture into whatever you'll be serving it in. I went with four small rammekins, but you could do one large bowl, etc.
4) Let the mousse sit in the fridge to chill for about 45 minutes. I learned that this is NOT as good frozen as it is chilled, so if you do put it in the freezer to chill more quickly, keep a close eye on it! The fully frozen variety loses some of the texture.

All finished! The bonus of the small rammekins is that I would have eaten the entire four serving bowl by myself otherwise...
This mousse is delicious on it's own, but I put blueberries on the top of TT's & chocolate chips on mine. I used Enjoy life Mini Chcocolate Chips--allergen free & non-GMO! Let me know how you get on--I'm especially curious to hear how this works with different sweeteners!
