Yeah, the words 'tequila' and slushie tell you nearly everything you need to know about this one. I raced last Saturday, which meant I got to indulge a bit more on Saturday night. In this case, I was craving a frosty drink. However, I struggle with 'frosty' drinks as they're usually mostly shaved ice, and then they just get watery. So I used some watermelon flesh to create a texture that worked really well. More on that in a moment. Let's begin at the beginning...
I ran a trail 30k last weekend. In fact, I ran the USATF 30K championship, I just didn't know that that was what I had signed up for. It was in Colorado Springs so I was up at 3:45 AM, walking dogs at 4 AM, then driving my car south while blasting Tina Turner, because 'Simply the Best' is a great song to jam to during an early morning drive.
This was officially a 'training race' for me--I hadn't tapered, I hadn't really even taken a break, I was just racing to keep myself in the right headspace and see how things were looking for me from a training perspective. It wasn't my finest race, which I wasn't expecting--but I did come in with a sub 3 hour time on a moderately technical course that, by my GPS, was 17 miles. Not too shabby! I also got a few compliments on my downhill running, which means the strength training I'm doing for my back and core must be paying off, which is a big win. Here's a photo of me--all smiles at the finish line, but trust me--I wasn't smiling the whole race. It was tough!
Items You Need:
Four cups watermelon flesh, cubed
Juice of one grapefruit
Juice of one lemon
Tequila (gonna let you fill in the blank on the amount you want here...)
Put all of your nonalcoholic items in your blender
Blend until smoothly pureed
Transfer into a freezer safe bowl, and put in the freezer
Every 20-30 minutes check on your mixture and stir it up, being sure to break up the ice chunks that are forming
Once the slushie texture is to your liking, pour your tequila into the bottom of a glass, then scoop slushie mix on top
Stir, enjoy. I didn't get the greatest photo--I don't own fancy margarita-type glasses, and also I was distracted by the urge to get to the drinking portion of the evening.
