Is the photo for this entry not the most amazing 70s inspired color palette? It is. It's also not the most appetizing, but bare with me, because this recipe is one of my major staples. I have always loved hummus, and I don't feel as bad eating it now that I've come up with a recipe that has all of the good stuff and none of the bad stuff. This is my ultimate snack. Post-run, post-work, etc. etc.
You'll need to tinker with the recipe to make it match your taste buds. The one below is a very basic version, but I always add to it--usually pickled jalapeno, olives, red pepper, etc. Switch it up every week! Also, this recipe is for a huge quantity, because I don't fuck around when it comes to hummus. Neither should you. Neither should anyone.
A note on this recipe: I re-hydrate my own garbanzo beans, but you can buy the canned version, too. I also use my food processor to make this, but a blender would work. Whatever you use, let this spin around for three times as long as you would expect (3-5 minutes). Good hummus is everything to do with texture, and if this isn't blended enough, it is not appetizing on the palette. Don't taste-test until it's blended for 3-5 minutes, as the texture can throw off the taste, and I've over-salted as a result. Few kitchen disasters are more tragic than 5+ cups of ruined hummus.

Items you'll need:
Five cups of garbanzo beans, rehydrated
1.5 tablespoons of tahini
4 Tablespoons of lemon juice
3 garlic cloves
2 tablespoons vinegar (I usually use the pickling vinegar from my jalapenos, but white vinegar is fine)
1.5+ cups of water (this really depends...more to follow in the directions)
1.5 tablespoons of salt
Start with the garbanzo beans only in your food processor or blender. Add a 1/2 cup of water. Let them get chopped up for a few minutes. Add all of your other ingredients. Continue to blend for another 3-5 minutes, THEN do you taste test. This keeps for awhile in the fridge, but may get watery so you will need to keep mixing it. Enjoy!
